One of the things I really wanted to do for Stephen now that we are reunited was to make him something from the Vitamix. Since it was a Christmas gift from him and this is his first time home since before then, he has yet to taste the deliciousness that the Vitamix can produce. The first thing I made him was a smoothie. It was good, but it wasn’t great. And I didn’t make that much. (I’m used to just making smoothies for one person, so I did that and then split it. Definitely not enough smoothie for my guy.)
After things quieted down post-Australia, I thrust the Vitamix cookbook into his hand and demanded that he pick out something, anything, for me to make. He landed on the Strawberry Yogurt Freeze.
Only 3 ingredients, all of which we already had on hand. Perfect! Yogurt, strawberries, and sugar got dumped into the blender. Then we gave it a whirl.
Things I like about this recipe:
- only 3 ingredients.
- Blending takes less than a minute.
- The consistency was perfect. (Probably the best consistency of a non-smoothie food that have made so far.)
- It tasted great! (It made me think of strawberry fro-yo, which I guess is exactly what it was!)
Stephen loved it! So much so that he ate 2/3rds of it. Fine by me. It tasted good, but I thought it was a little tart. I would use less sugar next time. My other complaint is that it takes a pound of strawberries. In my case, that was the entire bag of frozen strawberries that we had just purchased. This recipe could totally be cut in a half and still yield more than enough for 2 people. The cookbook also says that you can experiment by doing this with different fruits, so I foresee some experimentation on the horizon.*
